Carob

Carob is the edible pod of the carob tree (Ceratonia siliqua), widely cultivated around the Mediterranean including Crete and Cyprus. Naturally sweet and caffeine-free, it is dried and ground into carob flour or syrup, often used as a substitute for cocoa or sugar in sweets and baked goods.
